Common Instructions (for making rice and assembling the roll)

  1. To remove any remaining starch from the rice grains, wash and rinse the sushi rice under running water.
  2. Bring the sushi rice and water to a boil in a 1:1 ¼ ratio.
  3. Combine vinegar, sugar, and salt to make the sushi vinegar.
  4. After the rice is cooked, combine it with the sushi vinegar and cover it with a damp cloth until you need it again. Position a single nori sheet, rough side up, on the bamboo mat.
  5. Using wet hands, scoop up some rice and arrange it onto the nori. Without crushing the rice down, distribute it evenly throughout the nori. If using, season rice with a pinch of sesame seeds before turning it over so that the nori is facing up.
  6. Add your choice of sauce (if any) and toppings according to the list of fillings specific to each type of roll in a horizontal row starting 1 inch from the bottom.
  7. Squeeze down to create a lovely, tight roll by grabbing the nori and the mat and rolling them over the filling until the extra space at the bottom contacts the opposite side. Along the way, squeeze down to prevent the roll from maintaining its shape.
  8. Place the roll onto a board for chopping. After rubbing a wet paper towel over a knife, cut the roll into 1-inch pieces and enjoy.

By adding just a few staple ingredients to your pantry you can get creative with your toppings to create the perfect sushi according to your tastes. With these simple instructions, you will be a sushi whiz in no time and can whip up your favourite sushi roll with ease.
